What should I look for when inquiring for a Taxman?

I need to look for a current taxman. The one we had is retiring and he be good and honest. What do i look for when looking for a brand new one. I don't want to go to H&R block or any company close to that. I'm in So.California. To find a Jewish one would be nice, I hear they are accurate with money;)
